Ingredients

2 heads garlic
1 tablespoon plus 2 teaspoons ChefMD extra virgin olive oil, divided
1 (3 to 3½ pound) whole chicken
2 tablespoons ChefMD seasoning *
¾ cup dry white wine, such as Soave
2 small sweet potatoes (12 to 14 ounces), scrubbed, cut lengthwise into ½-inch thick wedges
¾ cup low sodium chicken broth or stock, such as Imagine or Pacific brands
½ teaspoon each: coarse sea salt or kosher salt and freshly ground black pepper
2 cups (10 ounces) frozen baby peas, thawed

* ChefMD® Spice Mix is currently in commercial development. Until it's available, use equal parts oregano leaf, marjoram leaf, and sesame seed.


Preparation

Heat oven to 375°F. Use a large knife to cut top off garlic bulbs, exposing some of each clove. Place on a large sheet of aluminum foil. Drizzle 1 teaspoon oil over tops of bulbs; wrap loosely in foil. Bake 40 minutes or until garlic is very soft.

Meanwhile, place chicken, breast side up, on a large cutting board. Using a very sharp knife, cut wings off wings cutting through the joint. Cut off leg-thigh pieces through the joint. Separate the leg from the thigh by cutting through the joint. Turn chicken over. Use kitchen shears or the sharp knife to cut down both sides of backbone. Reserve the back and wings for broth or another use (may be frozen up to 3 months.) Press down on both sides of the chicken bones in breast to crack the bone in the center. Use the knife or kitchen shears to cut through the breast forming two halves. Cut each breast half in half crosswise.

Heat remaining 1 tablespoon oil in an ovenproof large deep skillet or Dutch oven over medium-high heat. Lightly brown half the chicken pieces at a time in the oil, about 3 minutes. Turn; cook 1 minute longer. Transfer chicken to a plate; set aside. Add ChefMD seasonings to skillet; cook and stir 30 seconds. Add wine to skillet; simmer 3 minutes, stirring up browned bits with a wooden spoon. Stir broth into wine mixture; remove from heat. Add sweet potatoes to skillet; toss with broth mixture. Place chicken over sweet potatoes; drizzle any juices from plate over chicken. Sprinkle salt and pepper over all. Transfer skillet to oven; roast alongside garlic 30 minutes or until chicken is cooked through and sweet potatoes are tender. Remove chicken; discard skin and transfer to four shallow bowls. Add sweet potatoes to bowls; keep warm. Add peas to juices in skillet; heat through over high heat; add mixture to bowls. Unwrap garlic; squeeze softened garlic from the bulbs over the chicken.


Substitutions

Sauvignon blanc may replace the Soave white wine.

The healthy sweet potatoes are cooked in chicken fat in the skillet then cooked under the chicken which still has the skin on it. Doesn't sound too healthy to me.
My suggestion would be to skin the chicken first before cooking.

I think if you took the skin off the chicken, it would be dry in taste. If you read the instructions,, it did say to add the wine to the skillet and the seasonings,, and that picks up all the yummy parts. And then if you want to remove the skin then do so.. Nothing is set in stone when it comes to any recipe.. You can always tweek it too your liking..

If I decide to use smart chicken breasts (no skn, no bone) reduced the cooking time to 20-25 mins and basted, would that work? Or maybe do all this in the crock pot. I'm looking for easy. What do you think?

What is the retail price of the ChefMD spice? Is there a substitute? You see, I'm on a strict budget with a fixed income. Your fancy spice mixture may be too expensive for me to buy. I usually use what I can buy at the dollar store like garlic, onion, cayenne powders and seasoned salt. I know you may not approve but that's what I can afford. I went and looked at gumbo file at the grocery one day and they wanted $9.08 for 3 oz. That is simply not in my budget. So can you suggest lower priced substitutions for these high priced spices including your ChefMD spice? Otherwise, I have to stop bothering to read these recipes. I stopped watching Emeril after he came up with his essence of Emiril spice without telling us what's in it or suggesting a substitution.

I understand that agave is slow to break down than other forms of sweetener so you blood sugar will not spike. I would ask your health care professional or do a little test yourself to see how it affects your particular system.

Luke-Essence recipe :

2.5 tablespoons paprika
2 salt
2 garlic powder
1 black pepper
1 onion powder
1 cayenne pepper
1 dried oregano
1 dried thyme

all are tablespoons-Enjoy !

I want to know if agave sweetner is good for you if you have type 2 diabetes? I am reading that it is not even though it says so on the packaging.
